Culinary
Winterstellgut
Regionality
At Winterstellgut, food is cooked and pickled, smoked and simmered, braised and roasted, just as it has always been cooked and pickled, smoked and simmered, braised and roasted in the Lammertal. For this reason, all the dishes prepared by Florian Huber and his team in the Winterstellgut kitchen are made almost exclusively from regional ingredients – some picked and grown right behind the house, over in the forest or in the meadow.
The cuisine is based on the seasons and supports the regional farmers and hunters by not only processing the prime cuts of beef, pork and venison, but also transforming the whole animal into exceptional specialities with the care it deserves. The processed food comes from selected farms and partners we trust: the eggs and goat’s cheese from Annaberg itself, the pork, beef and game from our farms in the Murtal valley and the fish from our own Ausseerland fishery.
The parlour
The parlour is the heart of every Tennengau farm. The guests who have come and gone here have lent their soul to the parlours of the Winterstellgut: Their noisy weddings and their tender confessions of love, their big business ideas and their little misadventures have stuck to the atmosphere of the walls and floors, tables and ceilings. There are three lovingly decorated and furnished parlours in the Winterstellgut, which can also be reserved for groups of different sizes on request. In winter, the parlours are cosy and warm thanks to the traditional tiled stoves, while in summer it is difficult to choose between the sun terrace and the pleasantly cool parlour. And of course there’s good food too.
Swiss stone pine parlour
The Zirbenstube is the ideal retreat for smaller family celebrations or for business meetings in a particularly relaxed, undisturbed setting. This cosy room can comfortably seat up to 18 people.
Taproom
The light-flooded parlour is the heart of the inn. Locals and travellers alike enjoy the traditional atmosphere of the Winterstellgut in the detailed, friendly ambience of this parlour.
Veranda and sun terrace
Sunny spots for breakfast connoisseurs: food tastes even better in the light-flooded veranda – for example our special Winterstellgut breakfast. Outside the window, the Lammertal valley presents its mountain giants, inside you can enjoy the cosy ambience of the farmhouse parlour and the protection from wind and weather. You can take two hours to enjoy the view and breakfast!
In addition to good food from the kitchen and cellar, another famous regional speciality is served on the Winterstellgut’s wonderful sun terrace: the fresh Lammertal air. From the table you can look far out into the rear Lammertal valley, across to the Tennengebirge mountains and the Gosaukamm with its famous Bischofsmรผtze or watch the Haflinger cattle grazing. Actually, our terrace has only one disadvantage: you can’t sit inside in the parlour at the same time.
